Oat Bread ~ Warm From The Oven



Do you need to add a little more fiber to your diet?
Let’s get started!



Steel Cut Oat Bread

1 cup ~ steel cut oats
1/3 cup ~ molasses
1 tablespoon ~ olive oil
¾ teaspoon ~ salt
Zest from 1 orange
2 cups ~ boiling water
1 tablespoon ~ yeast
¼ cup ~ warm water
2 cups ~  whole wheat flour
2 to 2 and ½ cups ~ unbleached white flour


Combine steel cut oats, molasses, oil, salt, zest and in the boiling water. 

While this mixture is cooling . . .
Dissolve yeast in ¼ cup warm water and let set for 10 minutes,
Then mix these two mixtures together.

Next, work in your wheat flour and then your white flour,
Knead for 15 minutes or more until well mixed and a lovely ball is formed.
Place this in a greased~up bowl, cover with a dishtowel and set it in a warm place for about an hour.  It will double in size and be oh, so pretty.

Punch it down.
Form it into a loaf and place it into a greased~up loaf pan.
I formed mine into a round loaf and baked it in a 9 inch iron skillet.
Cover this with your dish towel and place back in your warm place to rise.
Let it rise for about 30 to 45 minutes, until double again.

Then bake for around 40 minutes at 375 degrees.

Enjoy, we always have to have a slice warm from the oven with melted butter.





Oh, and the other thing is  . . . your home is going to smell marvelous :)

    1. Hi Janet, It is a very good recipe, you will be glad you did. I couldn't stop eating it. I had a big slice right from the oven, another with dinner, and then just before bedtime . . . That's why I do not bake bread very often :) It is easy to leave the store bought stuff alone, but homemade is another story.

  7. Oprah says the steel cut oats are the most healthy and she eats them. So this would be not only delicious, but really nutritious!

    1. Hi Ginny, steel cut oats are more chewy and nutty than regular oats and they give the bread a nice nutty flavor. Try this recipe, I'm sure that you will love it. It's a good hardy loaf that would go great with a pot of stew.

  8. This sounds lovely and I will make it in the bread maker once I have unpacked it! My hands don't like kneading anything these days so hence the use of the bread maker. Thank you for such a lovely recipe xxxx

    1. Hi Fran . . . I made mine in the mixer with the dough hook, so I had very little kneading to do. It cuts the time down by about 3/4 so that's good. Those bread machines must be very nice. I'm afraid that if I had one I would be baking bread all the time and I'd need a new wardrobe (and not in a good way:). I can not seem to leave the homemade stuff along.

  9. Mmmmm that does look yummy Connie, I must have a go. Just one thing though, what are steel cut oats? Not heard of them over here.

    1. Hi Patricia, you may need to go to a heath food store to find them. They are a tiny little hard grain much difference from regular oatmeal, but well worth the hunt. My daughter likes them as breakfast oats, but I refer to use them this way or to mix them with regular oats for hot cereal. You may have another name for them in the UK, but I'm sure the health food shop owner will know.
