Easy Banana Coconut Cake

my Mama when I was a little girl)

You're all probably too young 
to remember a song 
that started out . . .
"If I knew you were coming
I'da baked a cake" 
 


Well last Friday I baked a cake 

and everyone wanted my recipe. 



I was a little hesitant to give it

because these ladies always

bake cakes from scratch.   



All that I did was add a 

ripe banana to a yellow cake mix,

then I added coconut extract 

to a powdered sugar and water 

glaze and topped with coconut.

Sooooooooooooo Easy! 

 



You might have noticed my 

aprons on the wall in 

the photo with the table.

My old rake handle hanger

is very full.

Since my fall a couple months ago

I have started wearing aprons 

everyday.  Not all by clothes

have pockets and if we fall 

and we are alone, having our

phone in our pocket is 

a necessity.

If you try my cake, you'll

have to take the good rating

from my friends, because I didn't

even taste it.




This is why.

I have been having this problem 

for well over a year,

but it started getting worst

so I've started this diet.

There are a lot of "NO'S" in it

that I don't like but I'm doing anyway.

No Coffee or Tea

No Chocolate

No Spicy Food

No High Fat Dairy . . .

That means

No Ice Cream

No Tomatoes

(and I have a garden full of them)

No Fried Foods

No High Sugary Foods

Oh, and many small meals eaten

slow throughout the day rather 

than my usual 

two eaten faster than I realized.  

😔What's a food loving girl to do😟

The bright side is that I've

been on it just over a 

week now and it working :)

to hang on the cupboard

Winter Sewing & Baking


The weather is very cold

and the roads are bad . . .

Time to stay inside and spend time

sewing and baking bread.

Don't you just love the smell

of bread baking in the oven.

The only thing better is 

slicing it and spreading

on some butter whiles it's warm :)

Full Time Gardening

 



 

That's what August feels like . . . 

Gardening all the time.

 Today's post is mostly photos.  







 

Of course that includes harvesting . . .

 

 

 


 

 





And canning.

 


 

Also, baking for the freezer 

 



 

and enjoying fresh meals

from the garden.  

 


 

I also had a lovely visit

from my youngest

and may I say beautiful

granddaughter.

They're all beautiful :)

One grew two arms just so it

could give the other one a 

Big Hug!

Do you know someone that 

could use a hug today?

Even a phone call that says,

"I Care"

Do it, it's a wonderful thing.

Get Outside & Enjoy!!!



 

Taking in the joys of the season

before the snow flies :)

I love this time of the year,

but it never lasts as long

as I'd wish.

Already our days are growing 

shorter and our nights

are growing colder. 

 ~~~🍎🍏🌻🍏🍎~~~

I've decided to enjoy 

everyday and every minute.

For tomorrow they will only

be a memory. 

 


This is the end of my 

yellow crookneck squash.

I grated the skin and the outside

flesh and then used one 

of my zucchini bread recipes.

 


 

In stead of vanilla extract 

I used orange and added walnuts.

The loaves came out so golden

and simply beautiful. 

 


 

Give it a try :)

You will not be disappointed. 

 

 

 

I also made another batch 

of applesauce.

This time using Golden Delicious.

 


 

Sunday a friend from church

asked me to join her

on a drive to a farm

that was celebrating 60 years

of family farming. 

 

 




 

It was such a nice afternoon.

A beautiful drive,

a chance to visit with a friend,

and a lovely experience. 

 


 

We even were given a box of apples

to either take home or make

our own jug of apple cider.

 


 

Here's my cider and a few

extra apples that I brought home :)

 

 

 


 

What a fun experience.

This sweet young lady helped

us make our cider and agreed

to having her photo taken.

Isn't she beautiful,

inside and out . . . 

such a sweetie pie. 🍎🍏
