The first glorious crop of the year,
Rhubarb
I'm going to take you from
Garden To Pie.
One step at a time.
Strawberry Rhubarb Pie
Ingredients:
1 cup white sugar,
1/2 cup all-purpose flour,
1 pound of fresh rhubarb, chopped,
2 pints of strawberries
Preheat oven to 400 degrees F.
In a large bowl, mix flour and sugar.
Add strawberries and chopped rhubarb.
Toss until rhubarb and strawberries are
well coated and let stand for 30 minutes.
This 30 minutes is very important,
it is the difference between
a watery pie and one that sets up nicely.
Next you need to make your
favorite double pie crust recipe.
I cheated and bought a ready made crust.
Fill your crust with the filling and
top with 2 tablespoons of butter.
Seal edges of top and bottom crust with water.
Crimp the edges and cut small holes in the
top crust to let steam escape.
I like to cut one center hole and curl the crust back.
Sprinkle top with 2 tablespoons of sugar.
Time to bake . . .
400 degrees for 35 to 40 minutes,
until bubbly and brown.
Cool & slice :)
Now comes the hardest part . . .
deciding if you want it with
whipped cream or ice cream.
You can have both if you wish.

Delicious! Sadly my 3 rhubarb plants are being very disappointing this year.
ReplyDeleteI am so sorry to hear that. Last week I looked at mine and it was just popping through the ground, and then Saturday I was amazed at how much it had grown . . . so there may still be hope for your plants.

ReplyDeletePie crust is hit and miss with me, but the store bought is very good and so easy :) If you like Strawberry Rhubarb pie this is a great recipe. Look who I'm talking to . . . a professional baker . . . I'm sure you already have a favorite recipe.

DeleteI picked rhubarb Saturday night for the first time this year. I had so much I filled two grocery bags from one plant! I took it all to Church and put it on a bench to be given away, it was gone in 10 minutes! I should get more within the next few days and I'll be making a few pies myself. Your photos look delicious!

ReplyDeleteIt is the easiest plant to grow . . . find a friend that has some and they will probably give you a start.
DeleteOh yum! that looks so delicious. I'm amazed you have rhubarb there already! What elevation are you? When I lived in LaPine, OR (about 70 miles south of Madras) we didn't get our crop of rhubarb until starting in June or July. The elev. there is 4250 feet though! I've never had strawberry rhubarb pie but sounds (and looks) very very yummy. Hugs.. Marilyn

DeleteThat look soooo delicious! I have never tasted rhubarb. A few years ago I set out one rhubarb plant and it started to grow, then died. You make a beautiful pie!
ReplyDeleteThank you for the praise . . . you should get another plant and try again. It really doesn't need any care, maybe you babied it too much . . . like you do your animals, LOL. Stick it in a corner of the yard that you don't visit much and forget about it :) If you ever try baking this pie, please let me know what you think.

ReplyDeleteIt's the easiest plant to grow. If you live where it is hot and dry like we do, then you have to give it a drink now and then and that's it. If you live in a humid climate, just plant it and forget about it :)

Looks delicious but that is one pie I have never made. Husband does not like rhubarb but I think he would like this with strawberries! Maybe we could both try a piece of yours! LOL Have a great day! ReplyDeleteIf he likes strawberries, then I think he would like it. The strawberry taste is the main flavor, but the rhubarb gives it just a hint of tartness. They make a wonderful combination:)

DeleteMy rhubarb plant isn't very big yet also doesn't get enough sun so we have an ad on Craigslist wanting to buy rhubarb. It's kind of early yet but I'm hoping to get enough for a yummy pie ( like yours) and enough to freeze as well.

DeleteOh my goodness, does that pie ever look good! My rhubarb is just starting to grow. I would love to try this recipe but I am doing so good with eating minimal sugar, that I don't dare tempt myself with something this delicious right now. In all seriousness, I would have a hard time just eating one piece. It's easiest for me if I don't keep tempting treats around. Out of sight, out of mind. Thus said, I am going to pin this photo and recipe on Pinterest...if I go to a barbeque this spring and summer, I could always make this and bring it to family or friend's house. DeleteARE YOU KIDDING ME!!!! Vanilla bean ice cream of course! On top, with the pie warm....I'm making one this weekend. The rain is supposed to stop on Saturday. Our rhubarb should be ready! I have frozen strawberries. I have pre-made pie dough. Mom's birthday is Monday and she will love it.....I'm doing it! I'll post a picture!

DeleteHi Connie! Back from our three month journey and had to stop in to see what you are doing! That pie looks absolutely delicious. I'm not a huge rhubarb fan but I don't mind a slice every now and then, and my mother and oldest son both really like it. Happy baking!
