I decided it was time for a new
profile photo.
I started this blog in 2006
so my photo is 15 years old.
This one is two years old,
but I'm smiling :)
Also, I found a new to me
website today
&
tried this muffin recipe.
Easy Moist Oatmeal Raisin Muffins
makes 12 muffins
- 1 box yellow cake mix (I like Betty Crocker)
- 2 eggs
- 1/3 cup oil
- 2 cups quick oats
- 1 1/3 cup water
- 2 tsp cinnamon
- 1 cup raisins
- 1/2 cup chopped walnuts
Simply mix everything together, and then fold in your raisins and walnuts. Prepare a muffin pan with cooking spray or liners, and then bake in a 350 degree oven for about 20-25 minutes or until a toothpick comes out clean.
Actually I used a small Jiffy cake mix
that is a 1/2 cake sized mix.
So; I cut everything in half.
For me 6 muffins is more
than enough.

ReplyDeleteGreat photo! Mine is a picture of me and my first grandson. He lived in Florida and this was the second time I saw him. I had flown down from Ohio for the weekend. Meanwhile, he just turned 13 years old last month.

ReplyDeleteYour new photo is so sweet. So sweet to see your smiling face back then.. and hope that smile pops up now, once and again when something strikes your fancy! Those muffins look fast and easy. I used to love using the Jiffy mixes, but I can't use them anymore as they aren't gluten free. Wish they were! I use gluten free cake mixes for different things now and then, (other than a cake!) and love using them for cookies and bars and muffins. I have a little cookbook called 100 Things to Do with a Cake Mix, and I use that using my gf cake mixes for all sorts of yummy things. I could try those muffins with my gf mix! They look so good and easy and I love muffins. Of course, 6 is NOT enough for me and my hubby. We just devour them so fast, whenever one of us makes desserts. PS.
