Last Saturday Steve and one of his buddies
were planning on making

homemade summer sausage.
As the day progressed it turned into a
potluck dinner with us and three other couples.

It was fun spending the afternoon together.
Steve wanted me to storybook the process,
so I was the photographer.
It started with grinding the pork.
mixing it up with the hamburger and . . .
adding the cure and then . . .
the spices.
Mixing it together again . . .
and then stuffing the sausage stuffer.
Next you put the casing onto the sausage stuffer
and start turning the crank.
Tie them off.
Refrigerate them over night to let the cure do it's magic.
Then into the smoker at a low and slow 175 degrees.
When the meat reaches 156 degrees
the sausage goes back to the refrigerator overnight.

Before we were done just about everyone
had a part in it :)
I have to say that it is the best
summer sausage that I have ever tasted.
They did an excellent job :)
This was our first time to try doing this,
but it will definitively not be our last!

ReplyDeleteIt is very good and leaner than what you buy in the stores. It's nice to have control of the ingredients and when you make it yourself it is so much fresher . . . besides being fun :)

ReplyDeleteYes we did . . . Hi Mountain Summer Sausage Seasoning Kit. It does 30 lbs of meat. The kit includes 2-4.2 oz cure packets, 2-10 oz seasoning packets, 10 Mahogany casings and instructions. DeleteI bet that was a lot of fun making this sausage! Delicious, too. But did the cure for the sausage have nitrates in it, or were you able to find a nitrate and nitrite-free cure?

DeleteOh my you guys are SO ambitious! Lots of work but looks like it was a good time had by all! And you didn't even need to make dinner.... it was right there! (well... not really... until the next day). Does it harden up and slice like "normal" summer sausage? It is making me drool right now! What a wonderful thing to do in the Fall.. and enjoying it with friends even better. Do we all get a taste??? hee hee..... Marilyn
ReplyDeleteI wish that I could have added a tasting sample tray to my post, but technology has not gotten that far yet, LOL. It slices the same as what you buy, but it tastes much better. That could be because we made it leaner and we used good cuts of meat . . . you just don't know what cuts you are getting when you buy it. After this experience I doubt that we will want anything but homemade from now on. It was that good :)

We couldn't believe how good it turned out. All that we had ever had before came from the super market. This was so much better. I'm sure that it had to do with the cuts of meat that we used.
