The last time I posted my zucchini bread
I had several of you ask for my recipe . . .
so here goes!
My recipe makes 2 loafs,
but I doubled it and then divided it in half
and added cranberries to one half and
blue berries to the rest.
So I baked 4 loafs.
The two above are the cranberry walnut.

Connie's Zucchini Bread
makes two loaves
Preheat oven 350 F or 175 C
Ingredients:
3-C all-purpose flour
1-t salt
1-t baking soda
2-T cinnamon
(we like cinnamon, you can add half this if you prefer)
1/4- t baking powder
3 large eggs
2-C sugar (I use Stevia)
1-T vanilla extract
1-C vegetable oil
3-C grated zucchini
1-C Walnuts
1-C fruit (optional)
(raisins, dried cranberries, or blueberries)

Mix flour, salt, soda, cinnamon and baking power.
Beat Eggs.
add and mix well – sugar, vanilla and oil.

Next add
zucchini and dry ingredients, mixing well.
Stir in nuts and fruit.
Because I doubled the recipe
when I was making it,
I then divided my batter into 2 bowls

Next, pour into greased & floured loaf pans.
Bake for one hour.

DeleteI would never have thought to add blueberries to zucchini bread! I said something about it to Jerry and he said, "Sounds good to me!" LOL! He loves blueberries, so I may have to try that next time.

Your prayers are greatly appreciated . . . there is no better way to love one another than through prayer and we certainly feel the love. I had never tried blueberries before either, but I had some in the refrigerator, so I thought that I should give it a go. My Steve loved the blueberry zucchini bread.

I love knowing that you use your walk time for your morning prayers and thank you so much for including us in them. We are grateful for every prayer and we feel the love, thank you. We have a three or four hour time difference, so you are probably praying for us before we are even out of bed . . . that's a very comforting thought.
DeleteYour Zucchini loaves look so delicious. I think I've mentioned that I cannot grow zucchini although as one old neighbour told me and I quote, "Any idiot can grow lettuce and zucchini". He obviously wasn't much for tact.

You know it is funny, because now that you mention it, I never heard them at all. In fact I was surprised to see all of them. We rode by there again today and there are even more planes parked. This should bring more jobs and people to our little town . . . not that it isn't growing too fast as it is, LOL. Thank you so much for your prayers, you're an angel :)

DeleteHi Connie- Here in Australia last week we have a special day -sort of -"Are you OK?" Day - it is mainly to check up on Friends and Family to see if they are traveling well and not suffering from illnesses which cannot be seen...such as anxiety, stress, worry etc...on this Day I thought of You and Steve (as I do most days)- and in my imagination I placed a call to you in the USA to talk with Steve and ask him about things and how he was travelling along...I wanted to say how much I admired the work he did on restoring his Yacht and talk about those times awhile. Connie- I lost my Brother (Lloyd) some fourteen years ago to cancer..he had inoperable cancer- like me he was a smoker...I miss him greatly- now days off course I remember well the times we shared at his Farm at Tamworth - I'd always visit at Christmas time...he was 16 years older than me and we always had a lot to chat about -especially in the evening and mild nights of summer on the Farmhouse veranda overlooking the Valley with thousands of Stars in the night sky. My Brother loved Planes - he use to build models for Radio Control for decades- his favorite Plane was the US 'Tojan T-26B'...he'd love your photos of the gathering of 737's...you know the Jumbo Airliner is now 50 years old...Sorry to prattle on...I just wish I lived nearby to you to be able to pop around for a chat and a cuppa and a slice of your lovely Zuccini Bread. ReplyDeleteKevin, I am sure Steve would enjoy your popping in too. There are days when he is not up for company and days when having a friend stop by brightens his whole day. I hate this thing called "cancer" it has stolen so many at an early age. Steve and I had great plans to grow old together . . . do the simple things of life. Sitting on the porch watching the world go by and camping under the stars. We've not given up hope, we do believe in miracles, but God knows best and we are not second guessing Him . . . we also know that sometimes He amazes the doctors and sets them on a head spin. That's what we hope to see :) Thank you for your blogging friendship and your caring heart.

Oil in muffins and loafs makes for moist goodness. My pumpkin muffin recipe also uses veg. Oil . Which I posted in the past. Thanks so much for sharing now am heading out to get some zucchini lol
ReplyDeleteYou'll have to tell me the date of the post with your pumpkin bread recipe. I would like to try it. I have never make pumpkin bread, but it sounds yummy. The air is starting to have a bit of an Autumn chill and it makes me start craving warm breads, stews and all things "comfort food".
DeleteOh Connie, I can almost smell that bread baking! I love the smells of home baking in the kitchen. I grew up with that. My mom baked so much with love.. that is how she showed her love.. all her lovely desserts, pies, cookies, breads, rolls, etc. Such memories! She loved zuchini bread and made it every summer.. I love the idea of putting the cranberries and walnuts in it. Yum! I have to eat gluten free, so have tweaked many recipes to find just the perfect one for me that is gluten free. I have a great banana bread recipe and will have to try zuchini bread too! Those planes all lined up is something I've never seen... very fun and interesting! Am thinking of you two today and hope you may find yourselves sitting out on that front porch, sharing some moments together. You remain so positive and that is such a blessing for you both... ReplyDeleteHi Marilyn, Steve is napping at the moment, so I thought that I would check my blog. Glad I did, so many sweet friends praying and wishing us the best. Yes, we did have some time sitting out on the porch. Steve is feeling much better today, the best he has since getting out of the hospital. He still has to nap off and on throughout the day and doesn't sleep well at night, but I feel like he needs to do what his body tells him. That gives us a strange schedule of ups and downs, but it's okay. Thank you for your sweet friendship. Oh, and your card and little angel are adorable . . . you're a sweetie with a caring heart.

ReplyDeleteI am so sorry that Steve has been so sick and was in the hospital. I know I tell you all the time, but I think about you guys a lot and keep you both in my prayers.
Oh my goodness, I know that you do and that amazing gift package shows it in abundance. I started eating the cookies as soon as I opened it and those peanut butter cups made with dark chocolate . . . they are addictive. I gave them to Steve and then he says you have to taste one, so okay . . . I couldn't stop at one, LOL. You shouldn't have, but we're so delighted that you did, thank you :) Today was the best day that he has had since getting out of the hospital.

Your zucchini bread looks so Yummy, Connie. My dad had a garden across the street from our house growing up, and he would always bring home zucchini, and my mom would cook it that evening for dinner. I wish she made some zucchini bread like you. I bet it tastes so good warm from the oven with butter. I think the nuts and fruit would make it taste even better. How wonderful that you like to bake. I've been doing some baking myself lately. Autumn must be on its way. : )
